Great Cooking out of IN THE KITCHEN WITH KIDS!

This week, my youngest daughter Demi and I cooked out of JUNIOR LEAGUES IN THE KITCHEN WITH KIDS: Everyday Recipes & Activities for Healthy Living.

Demi is almost 18 years old, but with the recipes being so healthy and quick & easy, they are perfect for our home and lifestyle! So, even though the recipes are kid-friendly and mother-approved, you don't HAVE to have a young child in the house to cook from this book!

We made the following, with notes included:

Saucy Carrots & Apples
I think this was probably my favorite of all we made this week. It makes up a HUGE batch and has incredible flavors. I love the mixture of veggie/fruit into one recipe. Even though I forgot to add the cinnamon right before serving, it was still yummy! (I just added the cinnamon to the leftovers since it made such a big batch.) I highly recommend this one.

Cheesy Stuffed Shells
Demi put this one together. I love that it has baked chicken in the ricotta filling. After baking the chicken breast she added some fresh basil from our herb garden at the point of mixing the filling ingredients together - fresh herbs always add that little extra something. I never can find the large open pasta shells (as pictured in the book) in the grocery stores anymore, so we just used manicotti for the pasta. Demi wound up cutting them open for easier sutffing, then rolling back together when placing in the dish. Your youngester can do the same thing if you can't find the open pasta shells - makes for much eaiser process on little hands. LOVELY LOVELY and so easy - thanks for the help Demi!

Grate-est Qucchini
This one requires a bit of "arm work" in grating up 4 zucchinis. When working with your child, be sure to stay close by since it's a lot of grating for one recipe. Excellent flavor and loved working with shallots - in all my years, I've never used them before and WOW do they had some nice flavor! I added some cut mushrooms and served over wheat pasta strips that I marinated in olive oil with seasalt and fresh ground pepper. Delightful Dinner for a vegetarian break!
