Blog Linked Into Facebook Notes!
I tried one and reveiwed about 5 others, and decided to STAY AWAY from outside applications to link my blog and facebook together!

Summer Time....and the living is FRANTIC!
All the more reason to start reviewing my summer-time "quick, easy, fresh" recipes. I dug out my all time favorite salsa, which I inherited from a good friend who I worked with many many years ago, when I first got into the cookbook publishing arena.
This has become such a staple around our house, that I now grow almost all the fresh ingredients in my very own garden out back. Nothing is finer than this tremendous summertime salsa. When I go to any type of gathering, I'm usually told to "bring the salsa!" I love having it for breakfast in an egg burrito, and of course it's the bombdiggity with just chips. I hope you enjoy it as much as we do.
Bill Sharpe's Salsa
3-4 medium tomatoes
1 green bell pepper
1 medium onion, about 1 cup (I like to use vadalia)
2-3 jalapeno peppers (use caution when seeding the peppers)
1) 8oz bottle of Wishbone Italian Dressing (don't fudge on the brand!)
1) 16oz Picante Sauce (Rosita's taste best, but Pace works well too)
1 tbl lime juice (optional)
3 tbl fresh cilantro (my girl prefers it without but I love it with)
Chop all the veggies fine to medium size. Add all ingredients together and let sit in the frig overnight so the flavors have time to blend. You can eat it immediatley, but tastes better if sits overnight.

Great Cooking out of IN THE KITCHEN WITH KIDS!
Demi is almost 18 years old, but with the recipes being so healthy and quick & easy, they are perfect for our home and lifestyle! So, even though the recipes are kid-friendly and mother-approved, you don't HAVE to have a young child in the house to cook from this book!
We made the following, with notes included:
Saucy Carrots & Apples
I think this was probably my favorite of all we made this week. It makes up a HUGE batch and has incredible flavors. I love the mixture of veggie/fruit into one recipe. Even though I forgot to add the cinnamon right before serving, it was still yummy! (I just added the cinnamon to the leftovers since it made such a big batch.) I highly recommend this one.
Cheesy Stuffed Shells
Demi put this one together. I love that it has baked chicken in the ricotta filling. After baking the chicken breast she added some fresh basil from our herb garden at the point of mixing the filling ingredients together - fresh herbs always add that little extra something. I never can find the large open pasta shells (as pictured in the book) in the grocery stores anymore, so we just used manicotti for the pasta. Demi wound up cutting them open for easier sutffing, then rolling back together when placing in the dish. Your youngester can do the same thing if you can't find the open pasta shells - makes for much eaiser process on little hands. LOVELY LOVELY and so easy - thanks for the help Demi!
Grate-est Qucchini
This one requires a bit of "arm work" in grating up 4 zucchinis. When working with your child, be sure to stay close by since it's a lot of grating for one recipe. Excellent flavor and loved working with shallots - in all my years, I've never used them before and WOW do they had some nice flavor! I added some cut mushrooms and served over wheat pasta strips that I marinated in olive oil with seasalt and fresh ground pepper. Delightful Dinner for a vegetarian break!

ALL Junior League Titles On Sale!
PERSONAL FAVORITE: One of my personal favorite Junior League titles is Tables of Content from the Junior League of Birmingham, AL. I've cooked out of it extensively, but a family favorite is their Roasted Cashews with Rosemary, which has a special story around our home. My eldest daughter, Melany, has been a staff person with YWAM (Youth With a Mission) for almost 5 years now, and in her many travels around the country and world-wide-mission trips, she has always loved it when I would send her a care package of goodies from home. Her favorite thing above all else is a batch of the Rosemary Cashews. They make up a good size batch, freeze well, and of course, travel well too! Here's the recipe....

What a wonderful new cookbook from the Junior League of Hampton Roads, Virginia! I've cooked quite a few items out of this one, and I'm sharing the Grandma's Famous Pound Cake with you here today. I tried the recipe upon the recommendation from Sam Bishop at the Junior League, but more importantly it was on a day that I had that thought we all have at some point in time, "What can I make from ingredients I already have on hand?"
When I first made the Grandma's Famous Pound Cake, my teenage daughter was amazed to find out what "REAL" pound cake was supposed to taste like.
It's super easy and freezes very well. More than likely, you too have all the ingredients in your kitchen pantry right now. Let me know if you found everything- it would be fun to hear back on this.
Another feature that caught my attention in this book (besides the fabulous cover!) is that each chapter opener features a vintage style apron fluttering in the wind pinned to a clothes line, which immediately conjured up great childhood memories for me. I don't know how many of you had a clothes line in the backyard as a child, but growing up in the 1960's we couldn't afford a dryer. So, my sister and I used to play in between the hanging sheets, and my mom would holler out the back door, "stop that - you girls are going to pull it all down"! I enjoy hanging out clothes in my own backyard these days when the weather is nice enough, even though I do have a dryer. There's nothing like fresh air dried clothes - too bad this smell can't be truly duplicated in a fabric softener scent. Plus, it helps save on the wear and tear on our clothes, the dryer unit and the environment as well!
I've also made the Sweet Bacon Pork Tenderloin, which is quick easy and all done in the oven using your cast iron skillet. I take the recipe one step further and put the skillet on top of the stove, after the meat is cooked, to boil the remaining drippings down to create a wonderful reduction sauce. We use the sauce over the tenderloin cuts and it's great as a main dish, or use for sandwiches.
Another Blast From The Past you'll find in this cookbook is a host of Mama-isms, which are sayings that have been handed down through the years from moms to their kids. Sayings like, "Don't make me stop this car" would strike fear in my sister and I in the backseat. I just adore all the Mama-isms scattered throughout the book and can literally hear my mom's voice at times. Funny that I now find myself using some of the same Mama-isms when speaking to my own two girls!

GRANDMA'S FAMOUS POUND CAKE
3 cups sugar
1/2 cup shortening
1 cup (2 sticks) butter, softened
5 eggs
1 cup mik
1 tablespoon vanilla extract
2 teaspoons almond extract
1 tablespoon lemon extract
3 cups all-purpose flour
Preheat the oven to 350 degrees. Cream the sugar, shortening and butter in a large mixing bowl. Add the eggs one at a time, beating well after each addition. Add the milk and flavorings. Add the flour 1/2 cup at a time, beating well after each addition. Pour into a greased and floured bundt pan. Bake for 1-1/4 hours. Cool in the pan for 10 minutes. Invert onto a wire rack to cool completely.
Serves 16
Sidenote: I like to serve this with dollop of Sherried Cool Whip - here's what you do:
Take 1 cup Cool Whip and add 2-1/2 tablespoons of Cream Sherry. Stir together well and let set for 30 minutes to let the flavors blend. I learned this from Miss Millie Coleman, author of The South's Legendary Frances Virginia Tearoom Cookbook. She told me that it doesn't matter about the quality of the sherry, so if you don't keep it on hand then just buy the cheapest you can find.
