PERSONAL FAVORITE: One of my personal favorite Junior League titles is Tables of Content from the Junior League of Birmingham, AL. I've cooked out of it extensively, but a family favorite is their Roasted Cashews with Rosemary, which has a special story around our home. My eldest daughter, Melany, has been a staff person with YWAM (Youth With a Mission) for almost 5 years now, and in her many travels around the country and world-wide-mission trips, she has always loved it when I would send her a care package of goodies from home. Her favorite thing above all else is a batch of the Rosemary Cashews. They make up a good size batch, freeze well, and of course, travel well too! Here's the recipe....
Makes 5 cups
These nuts stay fresh for several weeks in an airtight container making thyem the perfect gift.
2-1/2 (9 ounce) cans whole cashews (1-1/2 pounds) / I use a 21 oz can of Planters
2 tablespoons unsalted butter
1-1/2 tablespoons brown sugar
3 tablespoons chopped fresh rosemary
1 teaspoon kosher salt
1/2 teaspoon cayenne pepper
Preheat oven to 375 degrees. Spread the cashews in a single layer on a lightly greased baking sheet and heat for 5 minutes. Maintain the oven temperature. Melt the butter and brown sugar in a large stockpot over medium heat, stirring frequently. Remove from the heat and stir in the rosemary, salt and cayenne pepper.
Add the roasted cashews to the stockpot and toss to coat. Spread the cashews in a single layer on the baking sheet and roast for another 5 to 10 minutes or until light brown, stirring occasionally. Serve alone or sprinkled over salads.
